
The Original “313”
Detroit Style Pizza
PBO’s original 3-1-3 (inspired by the Detroit area code), is also the original brick oven Detroit style in the South Jersey area! We always make our dough fresh, then proof and bake it in traditional Detroit style 10″ x 14″ metal pans.
While Detroit style is similar to a classic Sicilian pie, the Detroit style has a thicker – yet still light and airy – crust that’s topped with cheese first. The metal pans combined with the heat from our brick oven transforms all of the cheese on top into the Detroit style’s signature charred cheese crust. Our “313” is finished with two strips of house-made tomato sauce and we think it’s best enjoyed piping hot! If you’re really bold, give any of our specialty pie toppings a try on our Detroit style crust!
Neo-Neapolitan Pizza (Round)
As the name suggests, Neo-Neapolitan is a modern twist on traditional Neapolitan style and a close cousin to the ever-popular New York style. Polizzi’s Brick Oven Neo-Neapolitans are made by hand-stretching our naturally fermented dough to achieve crisp, bubbly perfection every time. We add crushed tomato sauce, cheese and your choice of fresh toppings before baking these round pies at over 750 degrees in our famous brick oven. This high temperature is what helps to create the Neo-Neapolitan style’s distinctly crispier crust that still has just the right amount of both chew and char.


Sicilian Pizza (Square)
A Polizzi family classic, our traditional Sicilian pies start off by hand-stretching and proofing our freshly made dough in 16″ square pans. Each and every PBO Sicilian is topped with crushed tomatoes, mozzarella, Pecorino Romano and a touch of oregano – just like Nonno used to make. Of course, you can add your favorite toppings or enjoy one of our famous Tomato Pies! Tomato pies are available in both round and square (sorry, not available in Detroit style).
New Haven Style Pizza
Once one of PBO’s secret menu items (yes, we have a few #IYKYK), New Haven Style pizza is now available every Tuesday through Thursday! Our New Haven style is inspired by the thin-crust round pies that can be found in and around New Haven, CT. We start by skillfully stretching our fresh dough to be extra thin, then bake it in our brick oven until it’s ‘well-done’ and extra crispy. We top our New Haven pizzas with crushed tomatoes, mozzarella and up to one topping of your choice.

Par-Baked Pizza Instructions: Pre-heat oven to 450 degrees. Bake for 10 minutes, or to your desired doneness.
